- Ascorbic acid is a water-soluble antioxidant.
- Deficiency in ascorbic acid leads to scurvy. Scurvy is characterized by sore, spongy gums, loose teeth, fragile blood vessels, swollen joints, and anemia.
- Collagen quality will be poor in vitamin C deficiency.
